Rosso di Sicilia – Datterino Tomato Sauce, 11.64 oz (330 g)


The sauce is produced with Sicilian datterino tomatoes grown in the area of Ragusa and Syracuse. After the collection, the datterino is immediately destined to the transformation in the company. First of all, it is subjected to a careful phase of sorting and selection, by the operators, and abundant washing in the bubbling tank, followed by a phase of passing and chopping with its cooking. Once the raw puree has been obtained, it is pumped through a tube-tube system and sent to the concentration boule and mixed with the other ingredients. The real cooking phase of the sauce takes place inside the boule, by concentration and extraction of the free water contained in the tomato which allows evaporation at a lower temperature preserving all the nutritional and organoleptic properties of the product itself.
