ADAMAS® is the exclusive Italian caviar which represents the excellence of fish farming worldwide. ADAMAS® caviar is a unique product thanks mainly to the water where our sturgeons are born and raised. The quality of the water is to aquaculture and caviar as the ‘terroir’ is to vineyards and wine. Those who have a favorable starting position are facilitated to obtain a high-quality finished product. Adamas is the brand name of the caviar produced by Salmo Pan srl, a farm which counts 3 generations of breeders, located in Pandino in the heart of the Tormo River Natural Park. This river originates from numerous fontanili (natural water springs) that feed it throughout its course. It is an atypical river, in fact it is born in the plain and its waters come entirely from springs and small tributaries (described in medieval times as “flumen Turmum”). In these springs water comes to surface after being filtered by hundreds of meters of sand and gravel. Thanks to this natural filtering, water comes out crystal clear, fresh in summer and temperate in winter. These characteristics make it ideal for sturgeon breeding and guarantee a production of caviar of the highest quality consistently throughout the year. In addition, to the purity of the water of the Tormo River, Salmo Pan has at its disposal 4 wells of untreated drinkable water (defined so by European Community) from which it extracts, in case of drought of the Tormo River, to bring water to the whole farm, thus raising the level of water quality.

Adamas – White Sturgeon
Caviar Green ADAMAS® is a fresh Italian Caviar, native of the North West of North America obtained from the sturgeon Acipenser Transmontanus commonly called White Sturgeon. These sturgeons can weigh over 60 kg and unlike other types of sturgeon their meats are whiter. It takes 12 years to obtain caviar from this species. It is excellent in cooking for its white, compact and very valuable meat. The diameter of the egg is between 2,8 and 3 mm and the color is dark matrix which often tends to black or anthracite grey.
