Their Primo Sale cheese is made on the island of Sicily–primo sale, meaning “first salt.” Primo sale is an artisanal sheep’s milk cheese with a much shorter maturation period than most sheep’s milk cheeses, resulting in a delicate flavor and softer, creamier texture.

Pecorino Pistachio DOP
Primo Sale is made from sheep’s milk and is traditionally made in Sicily. It has a bright and fresh aroma and is bursting with a sweet milky flavor. Here, pistachios are folded into the curds for an added kick of flavor and color. It’s a great addition to an antipasto platter and a perfect way to savor two of Sicilia’s finest flavors.
