Acetaia Mussini – Saba

Saba is a Condiment typical of Modena. It is a syrup made from grapes obtained from the slightly pressed must and cooked slowly. Historically, before the time of sugar, it was used as a sweetener along with honey. Farmers used this product both for sweet dishes and to season simple dishes such as polenta.

Ideal with mature and flavored cheeses and fresh ricottas, it also goes well as a condiment for salad, raw or cooked vegetables. Excellent for desserts: on vanilla ice cream or cream, with cooked fruit or cooked chestnuts. In summer, added to water or with ice, it becomes an excellent refreshing beverage or a base for long drinks.
